	dutch street food Amsterdam street food. At many locations in the city you can find these fish carts. They sell, amongst other things, the famous Dutch herring. In the 14th century a man called Willem Beukelsz thought up a way to keep the fish longer fresh, the gutting or gibbing of the herring. This enabled the fishermen to stay longer at sea. The fish was salted ( and nowadays frozen) and then matured slowly. So we eat them raw, with chopped onions and/or pickles. Since our country is very flat, there was not a lot of natural stone, so this had to be imported. We do have a lot of lakes and rivers, and therefor clay, we used the clay to make bricks, which became the main building material. 	amsterdam 17 At the end of the 15th C the city was surrounded by a brick wall. There were entrance gates, defense towers and a canal, the Singel gracht. This is the Schreierstoren. The name is derived from Schreyhoeckstoren, meaning the sharp angle of the tower. However the Dutch word schreien also means to cry, so we call it the tower of tears or the weeping tower. From this tower the wives of the sailors waved good bye to their husbands when they set sail. When the city expanded beyond the wall at the end of the 16th C, the wall was demolished and the gate became the weigh house. The building housed several guilds, such as the painter’s guild, the mason’s guild and the surgeon’s guild in the 17th C. Anatomical lessons took place in the building, like the one depicted by Rembrandt: the Anatomical lesson of Dr. Tulp. For these lessons, that took place during the winter months due to lack of refrigeration, the bodies of convicted criminals were used. At the beginning of the 19th C the building stopped being used as a weigh house. It then had many different purposes and housed for a while the Jewish historical museum.
