dutch traditions 5Pea soup! On a foggy and grey day like today you need this typical Dutch soup. My grandmother used to make the best pea soup. The ingredients are ribs for the stock(or for a vegetarian version use a vegetable stock) which you brown in a pan, add water and a bayleaf and split peas and simmer for an hour. In the mean time dice onion, carrot, leek, celeriac and a couple of celery stalks. Remove the ribs and bayleaf from the pot, take the meat off the ribs and put it back in the pot together with the diced vegetables and let it simmer for another 20 mins, stirring occasionally and maybe add some more water. Season with salt and pepper and put in a smoked sausage. Serve with rye bread and smoked bacon.
